Assessing the Effect of Eating Environment on Dietary Habits of College Students
For many college students, living away from their parents or guardian marks a significant change in lifestyle and daily responsibilities. Although college students are responsible for maintaining a healthy diet, they may be failing to do so. Studies have shown that students attending universities may have lower quality diets when compared to the guidelines set by the USDA. The purpose of the proposed study is to asses the eating behaviors of university students, evaluate the diets using the Healthy Eating Index (HEI), and analyze how the nutrition environment contributes to such dietary patterns. The subjects for the study will be University of Florida students enrolled in a Health Promotion Experience course for the summer-2012 and fall-2012 semesters. Overall diet quality will be calculated from the 24-hour recall data to determine the HEI score. To evaluate the food environment, students will complete standardized questions regarding where they eat their meals most often as either on-campus dining, on or off-campus restaurants, in the home, fraternity/sorority houses, or alternate locations not specified. Using these locations and thorough dietary intake evaluations/HEI scores, I will evaluate whether one’s food environment is a factor in overall diet quality of college students.
